%3C/p%3E%3Cp%3EThis%20was%20the%20process:I%20seared%20two%20of%20the%20shanks%20and%20put%20them%20in%20the%20pressure%20cooker%20with%20some%20onion,%20celery,%20carrot%20and%20garlic%20(poised%20on%20a%20piece%20of%20foil,%20twisted%20like%20a%20pretzel%20to%20keep%20the%20meat%20off%20the%20bottom%20since%20I%20didn%E2%80%99t%20have%20a%20rack%20that%20would%20fit),%20added%20a%20cup%20of%20beef%20broth%20and%20a%20cup%20of%20red%20wine.I%20repeated%20the%20process%20with%20the%20remaining%20three%20shanks%20in%20my%20mega%20pan%20(except%20that%20I%20realized%20after%20sealing%20the%20cooker%20that%20I%20forgot%20to%20add%20any%20seasoning%20at%20all,%20so%20I%20tossed%20in%20some%20dried%20Italian%20herbs%20as%20well).%20Both%20pans%20got%20covered%20and%20the%20Mega%20Pan%20went%20into%20a%20350%20degree%20oven%20while%20the%20pressure%20pan%20stayed%20on%20a%20medium%20flame%20on%20the%20stove%20top.%3C/p%3E%3Cp%3EThe%20cooker%E2%80%99s%20manual%20said%20to%20cook%20it%20for%20about%2035%20minutes,%20which%20we%20did,%20but%20we%20had%20our%20doubts%20about%20whether%20the%20pan%20was%20properly%20sealed,%20because%20the%20safety%20lock%20never%20popped%20up,%20so%20we%20left%20it%20in%20a%20while%20longer%20and%20ended%20up%20pulling%20both%20pans%20out%20at%20the%20same%20time,%20after%20about%2045%20minutes.%3C/p%3E%3Cp%3EWhen%20comparing%20the%20two%20side%20by%20side,%20I%20must%20say%20there%20was%20not%20a%20dramatic%20difference.%20The%20Mega%20Pan%20produced%20a%20more%20flavorful%20meat,%20partly%20from%20the%20herbs%20that%20I%20added,%20but%20not%20entirely,%20I%20don%E2%80%99t%20think.%20The%20meat%20was%20tender,%20but%20not%20falling%20apart.The%20pressure%20cooker%20brought%20forth%20a%20beef%20shank%20that%20was%20extremely%20tender,%20nearly%20falling%20apart,%20and%20quite%20tasty%20as%20well.I%20do%20think%20if%20we%20had%20removed%20it%20from%20the%20pan%20at%20the%2035%20minute%20mark,%20it%20would%20have%20been%20about%20equal%20to%20the%20other%20example.%20All%20in%20all,%20a%20good%20test!%20And%20I%E2%80%99ve%20decided%20that%20either%20method%20is%20great.%20I%E2%80%99m%20still%20a%20little%20nervous%20about%20the%20pressure%20cooker,%20but%20I%20will%20be%20intimidated%20no%20more!%20Although,%20to%20be%20honest,%20the%20oven%20method%20was%20much%20simpler,%20in%20my%20own%20opinion,%20and%20I%20can%20make%20more%20at%20a%20time%20that%20way,%20since%20I%20am%20accustomed%20to%20cooking%20large%20meals.%20So,%20you%20decide!%20Pressure?%20Or%20Pan?%3C/p%3E%3Cp%3ESince%20I%20had%20so%20much%20time%20on%20my%20hands,%20I%20made%20my%20favorite%20Cream%20and%20Leek%20Risotto%20to%20go%20alongside%20it.%20(There%20is%20also%20an%20ulterior%20motive%20here.)%20I%E2%80%99ve%20posted%20this%20risotto%20before,%20but%20never%20had%20any%20decent%20pictures,%20so%20you%E2%80%99re%20going%20to%20get%20it%20again!%3C/p%3E%3Cp%3ESome%20people%20are%20as%20intimidated%20by%20risotto%20as%20I%20am%20by%20pressure%20cookers,%20but%20it%20is%20really%20a%20very%20simple%20dish%20to%20prepare.%20The%20basic%20ingredients%20are%20a%20good%20rice%20(I%20use%20Arborio%20because%20it%20is%20readily%20available%20in%20my%20area),%20stock,%20and%20some%20kind%20of%20vegetable.%20There%20are%20as%20many%20variations%20as%20you%20can%20imagine.%3C/p%3E%3Cp%3EThe%20original%20recipe%20came%20from%20The%20Silver%20Spoon.%20For%20this%20risotto,%20you%20need%20a%20couple%20of%20nice%20leeks,%20thoroughly%20rinsed%20and%20very%20thinly%20sliced,%20using%20only%20the%20whites%20and%20light%20green%20parts.%202%20cups%20of%20Arborio%20rice,%20a%20couple%20of%20tablespoons%20of%20butter,%206%20cups%20chicken%20stock,%20%C2%BE%20cup%20heavy%20cream,%20and%20%C2%BD%20cup%20parmesan%20cheese%3C/p%3E){kind=link}
