%20and%20the%20mass%20of%20people%20(we%20feel%20the%20whole%20India%20is%20waiting%20for%20a%20train)%20and%20the%20variety%20of%20foods%20-%20especially%20these%20days%20where%20we%20have%20special%20trains%20with%20their%20own%20restaurant%20compartments-%20endear%20the%20trains%20to%20us.It%20has%20become%20a%20part%20of%20life%20that%20we%20want%20to%20avoid%20but%20we%20find%20itself%20in%20it.It%20is%20also%20a%20place%20where%20we%20meet%20different%20kinds%20of%20people,share%20food%20and%20stories%20especially%20if%20it%20is%20a%20long%20distant%20train%20that%20spans%20several%20days.Ladies%20Coupe%20or%20Ladies%20Compartment%20has%20been%20associated%20with%20a%20train%20-%20passenger%20as%20well%20as%20long%20distant%20trains%20-a%20compartment%20specially%20for%20ladies%20or%20%22Ladies%20Only%22%20has%20been%20a%20good%20idea%20especially%20in%20a%20place%20like%20India%20where%20several%20atrocities%20has%20been%20committed%20against%20women%20and%20are%20still%20rampant.It%20has%20become%20a%20place%20where%20ladies%20sit%20and%20talk%20together%20share%20stories%20and%20food,and%20even%20chop%20veggies.%3C/p%3E%3Cp%3ELadies%20Coupe,a%20novel%20by%20Anitha%20Nair,%20tells%20us%20the%20story%20that%20happened%20in%20a%20ladies%20compartment%20of%20Bangalore%20Kanyakumari%20Express%20about%20six%20ladies%20who%20met%20for%20the%20first%20time%20and%20shared%20their%20life%20stories.Sometimes%20we%20feel%20perfectly%20normal%20when%20we%20share%20our%20fears,life%20and%20secrets%20to%20perfect%20strangers.The%20story%20begins%20with%20,Akhila,who%20forgot%20to%20live%20her%20life%20for%20the%20sake%20of%20siblings%20but%20was%20left%20alone%20when%20the%20siblings%20flew%20away%20to%20their%20own%20nests.She%20starts%20the%20journey%20from%20Bangalore%20and%20meets%20up%20Prabha%20Devi,Janaki,Margret%20Shanti,Marikulanthu%20and%20Sheela%20and%20opens%20up%20her%20mind%20and%20listens%20to%20them.Each%20feel%20their%20is%20a%20sad%20story%20till%20they%20hear%20the%20other.%20Akhila%20searchs%20within%20herself%20and%20others%20whether%20a%20woman%20needs%20a%20man%20to%20feel%20complete.While%20reading%20the%20story%20we%20feel%20we%20can%20identify%20with%20these%20characters.Foodwise%20there%20are%20some%20references%20and%20recipes%20but%20the%20general%20railway%20food%20comes%20into%20our%20mind.FYI,the%20author%20talks%20about%20Appam%20and%20stew%20when%20the%20train%20stops%20at%20Palakkad.Appam%20and%20Stew%20is%20one%20the%20signature%20dishes%20of%20Kerala%20and%20has%20been%20a%20popular%20food%20from%20Palakkad%20(erstwhile%20Palghat)railway%20station.%3C/p%3E%3Cp%3EAnyway%20the%20novel%20full%20of%20food%20reminds%20me%20of%20the%20cutlets%20that%20I%20used%20to%20get%20while%20travelling%20on%20the%20Southern%20Railways.A%20mix%20of%20several%20vegetables%20and%20batter%20fried(shallow%20or%20deep)%20it%20is%20a%20perfect%20example%20of%20different%20classes%20and%20mindsets%20sitting%20together%20and%20travelling%20to%20a%20common%20destination,er%20stomach%20in%20case%20of%20cutlets.The%20greasy%20cutlets%20with%20in%20Southern%20Railways%20were%20always%20a%20popular%20evening%20snack%20though%20I%20prefer%20much%20healthier%20shallow%20fried%20version%20my%20mom%20makes.The%20ingredients%20are%20basically%20potato,carrots%20and%20beets,though%20we%20can%20add%20whatever%20leftover%20veggies%20we%20like%20or%20cooked%20beans%20cheese(paneer)%20etc.%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3ECook%20the%20potatoes,carrot%20and%20peeled%20beets.You%20can%20cook%20them%20altogether%20or%20separately%20or%20can%20even%20grate%20the%20carrots%20and%20beets.Chop%20the%20onions,tomato%20and%20green%20chillies%20and%20grate%20the%20ginger.%3C/p%3E%3Cp%3EHeat%20little%20vegetable%20oil%20in%20a%20pan,add%20the%20chopped%20onion%20and%20grated%20ginger%20and%20chopped%20green%20chillies%20and%20cook%20till%20soft.Add%20chopped%20tomatoes,little%20salt%20,optional%20pepper%20and%20chilli%20powder%20and%20saute%20for%20a%20few%20minutes.If%20you%20are%20using%20any%20uncooked%20vegetables%20or%20even%20grated%20beets%20and%20carrots%20then%20you%20can%20add%20at%20this%20point%20and%20saute%20till%20they%20are%20cooked.%3C/p%3E%3Cp%3EAdd%20the%20mashed%20potatoes%20and%20semolina/bread%20crumbs,mix%20well%20and%20cook%20for%20a%20few%20more%20minutes.The%20semolina%20is%20used%20as%20a%20thickner%20or%20it%20absorbs%20any%20extra%20liquid%20in%20the%20mix%20of%20vegetables%20keeping%20it%20moist%20at%20the%20same%20time.Check%20for%20salt%20and%20add%20more%20if%20needed.Let%20the%20mix%20cool%20till%20it%20can%20be%20shaped%20into%20balls.The%20potatoes%20also%20act%20as%20a%20binder.The%20quantity%20of%20spices%20and%20chillies%20is%20guestimate%20and%20adjust%20as%20per%20your%20taste%20and%20choice%20of%20vegetables.Chilli%20powder%20and%20pepper%20are%20completely%20optional,but%20if%20you%20do%20not%20have/like%20chillies%20then%20you%20can%20use%20this%20more.Crumbled%20paneer%20can%
