6 x Jalapeno peppers, seeded and minced

1 Tbsp. Black peppercorns, cracked once

2 Tbsp. Curing salt (kosher salt)

1/4 tsp Garlic salt

1 Tbsp. Liquid smoke

1/4 tsp Mustard seed

1/4 tsp Onion salt Mix all ingredients well. Form into 2 rolls and wrap tightly in foil. Chill 24 hours. Bake over broiler pan with water at 350 F. for 1 1/2 hours. Remove from foil after baking. Good served warm or possibly cool.
