Ingredientes

  • 8 ounce spiral pasta (rotini or possibly rotelle)
  • 11/2 Tbsp. light extra virgin olive oil
  • 1 lrg onion quartered, and
  • thinly sliced
  • 2 x garlic cloves chopped
  • 1 med bunch broccoli cut bite size
  • 2 lrg ripe tomatoes diced
  • 2 c. cooked adzuki beans - (to 2 1/2)
  • (from about 3/4 c. raw)
  • 1 tsp freshly-grated ginger
  • 2 Tbsp. dark miso - (to 3) or possibly to taste
  • 11/2 Tbsp. cornstarch or possibly arrowroot
  • 1 c. hot water
  • 1 tsp dark sesame oil

Direcciones

  1. Cook the pasta according to package directions. When al dente, drain and set aside in a large serving dish.
  2. In the meantime, heat the oil in a large skillet; saute/fry the onion over medium heat till golden brown. Add in the garlic and broccoli; saute/fry, covered, till the broccoli is bright green, about 2 min. Add in the tomatoes, adzuki beans and ginger. Simmer over low heat for 10 min.
  3. In a small bowl, stir together the miso, cornstarch or possibly arrowroot and water till smooth. Pour into the skillet along with the sesame oil. Simmer gently till the liquid has thickened, about 10 min. Add in sauce and broccoli mix to pasta; toss gently to combine. Serve at once.
  4. This recipe yields 4 to 6 servings.
