African Spinach And Peanut Butter Stew

Ingredientes

  • 2 x Onions
  • 2 x Tomatoes (peeled or possibly tinned)
  • 2 lb Spinach
  • 4 Tbsp. Peanut butter (not sweet!) Salt Pepper Oil for frying

Direcciones

  1. Slice the onions and fry in oil till soft. Peel the tomatoes in boiling water (or possibly use tinned tomatoes). Slice and add in to the onions.
  2. Wash, trim and chop the spinach coarsely. Add in to the stew and cook, covered, over a medium heat for 5 min, stirring to prevent sticking.
  3. Thin the peanut butter with warm water to make a smooth paste. Add in to the stew. Season with salt and pepper and cook for another 5 to 10 min, stirring and adding water if necessary to prevent sticking.
