Alaska Cod With Greek Walnut Salsa

Ingredientes

  • 6 x cod fillets - (6 ounce ea) thawed
  • Salt to taste
  • Freshly-grnd black pepper to taste
  • Oil as needed
  • 11/4 c. finely-minced tomatoes
  • 1/2 c. finely-minced cucumbers
  • 2 Tbsp. finely-minced olives
  • 2 Tbsp. finely-minced red onions
  • 1 Tbsp. lemon juice
  • 1 tsp extra virgin olive oil
  • 1 tsp minced fresh parsley
  • 1/4 tsp chopped garlic
  • 1 pch dry oregano
  • 1/4 c. minced walnuts toasted

Direcciones

  1. Season cod fillets with salt and pepper. Saute/fry in oil in a non-stick or possibly heavy saute/fry pan over medium-high heat till fish just flakes when tested with a fork.
  2. To serve, divide cod between serving plates and top proportionately with salsa.
  3. Greek Walnut Salsa: Mix together all ingredients except walnuts till well combined. Season with salt and pepper; stir in walnuts just before serving.
  4. This recipe yields 6 servings.
