Ingredientes

  • 1 lb grnd beef
  • 1/4 c. seasoned dry bread crumbs
  • 2 Tbsp. chopped onion
  • 2 Tbsp. water
  • 1 x egg
  • 1/2 tsp salt
  • 3/4 tsp Tabasco pepper sauce divided
  • 1 lrg green pepper
  • 2 Tbsp. extra virgin olive oil
  • 1 med onion minced
  • 1 x garlic clove chopped
  • 4 c. beef broth
  • 16 ounce canned tomatoes undrained
  • 1/4 tsp saffron threads crumbled

Direcciones

  1. In a medium bowl, combine beef, crumbs, chopped onion, water, egg, salt and 1/4 tsp. Tabasco sauce; mix well. Shape into 1 inch meatballs. Cover and chill.
  2. Coarsely chop sufficient green pepper to yield 1/2 c.. Cut remainder into strips for garnish.
  3. In large saucepot, heat oil. Cook 1/2 c. minced green pepper, minced onion and garlic for 3 min or possibly till tender. Stir in broth, tomatoes, saffron and remaining 1/2 tsp. Tabasco sauce. Bring to a boil, reduce heat, and simmer 20 min; stir occasionally.
  4. Add in meatballs, simmer, covered, 20 min longer or possibly till meatballs are cooked. Ladle into hot bowls and garnish with green pepper strips.
  5. This recipe yields 6 servings.
