- Heat a knob of butter with some oil in a frying pan and lightly cook the shallots.
- Before the shallots brown, add in the alligator fillets and turn up the heat.
- Cook for 1 to 2 min while stirring and then add in the wine. The liquid in the pan should be cooking intensely.
- After 30 seconds, add in the cream and season. Continue cooking and stirring so which the ingredients combine and reduce, approximately 30 seconds.
