.%20%20One%20of%20those%20rare%20fruits,%20in%20season%20when%20I%20was%20there,%20was%20sea%20buckthorn%20berry,%20and%20these%20he%20used%20in%20a%20delightful%20macaroon%20that%20was%20on%20the%20pastry%20plate,%20as%20well%20as%20in%20jelly,%20which%20he%20brought%20to%20us%20in%20a%20small%20glass.%20Both%20items%20were%20very%20different%20and%20interesting.%3C/p%3E%3Cp%3EBrown's%20scones%20are%20a%20little%20different%20from%20the%20average%20scone,%20whether%20British%20or%20American.%20%20They%20are%20tiny,%20round%20scones%20and%20have%20a%20more%20tender,%20cakey%20texture%20than%20the%20scones%20you%20find%20in%20the%20supermarket%20or%20bakeries%20in%20London%20(this%20is%20most%20likely%20because%20Chef%20Ecuvillon%20mixes%20in%20the%20butter%20until%20no%20longer%20visible,%20rather%20than%20the%20others%20who%20mix%20it%20in%20more%20chunkily).%20%20The%20round%20shape%20is%20definitely%20traditional%20-%20chef%20Ecuvillon%20told%20us%20that%20he'd%20probably%20be%20out%20of%20a%20job%20if%20he%20made%20them%20wedge-shaped!%20%20Wedge-shaped%20ones%20are%20easier%20to%20make,%20and%20you%20don't%20have%20any%20scraps%20to%20re-roll%20the%20way%20that%20you%20do%20with%20round%20ones.%20%20Scones%20made%20from%20scraps%20are%20a%20little%20denser,%20and%20Chef%20Ecuvillon%20always%20discards%20the%20scraps%20so%20that%20each%20scone%20is%20always%20perfect.%3C/p%3E%3Cp%3EFor%20our%20class%20the%20next%20day,%20we%20decided%20to%20try%20and%20replicate%20Brown's%20scones.%20%20We%20made%20them%20in%20the%20traditional%20round%20shape%20(we%20did%20re-use%20the%20scraps),%20and%20in%20the%20easier%20wedge-shape.%20%20Our%20British%20scones%20came%20out%20great.%20%20They%20weren't%20quite%20as%20pretty%20as%20Chef%20Ecuvillon's,%20but%20they%20were%20delicious.%20%20When%20I%20made%20them%20at%20home%20in%20North%20Carolina,%20however,%20they%20really%20didn't%20come%20out%20well.%20%20The%20reasons%20for%20this,%20along%20with%20American%20measurements%20and%20details%20will%20follow%20in%20part%202.%3C/p%3E%3Cp%3EPlace%20the%20flour,%20baking%20powder%20and%20salt%20into%20a%20large%20bowl.%20%20Add%20the%20diced%20butter,%20and%20using%20your%20fingertips,%20rub%20the%20butter%20into%20the%20flour%20until%20it%20is%20no%20longer%20visible.%20%20Stir%20in%20the%20sugar.%3C/p%3E%3Cp%3EToss%20the%20sultanas%20into%20the%20above%20mixture.%20%20Make%20a%20well%20in%20the%20mixture%20and%20pour%20in%20all%20of%20the%20milk.%20Stir%20with%20a%20spoon%20until%20the%20mixture%20starts%20to%20come%20together.%3C/p%3E%3Cp%3ETurn%20the%20mixture%20onto%20a%20lightly%20floured%20surface,%20and%20knead%20gently,%205%20or%206%20times,%20until%20it%20forms%20a%20smooth,%20soft%20dough.%20%20Form%20the%20dough%20into%20a%20round%20and%20wrap%20in%20cling%20wrap%20and%20chill%20for%201%20hour.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20200%20degrees%20C.%20or%20Gas%20Mark%206.%20%20Line%20a%20baking%20sheet%20with%20parchment%20paper.Roll%20the%20dough%20gently%20on%20a%20floured%20surface%20to%20about%202.5%20cm.%20thick.%20%20Dip%20a%205cm%20cookie%20cutter%20into%20flour,%20and%20then%20cut%20out%20the%20rounds,%20dipping%20the%20cutter%20as%20needed.%20%20Press%20together%20scraps%20and%20re-cut.%20%20Place%20the%20rounds%20on%20the%20parchment%20paper.%3C/p%3E%3Cp%3EAlternatively,%20you%20can%20shape%20the%20dough%20into%20two%208-inch%20rounds%20and%20cut%20the%20rounds%20of%20dough%20into%208%20wedges.%3C/p%3E%3Cp%3EMake%20the%20egg%20wash,%20by%20mixing%20the%20ingredients%20together%20in%20a%20small%20bowl.%20%20Brush%20the%20tops%20of%20the%20scones%20with%20the%20egg%20wash.%3C/p%3E%3Cp%3EBake%20for%208-10%20minutes,%20until%20the%20scones%20are%20golden%20brown%20and%20look%20and%20feel%20cooked%20on%20the%20sides.%20%20Let%20the%20scones%20cool%20until%20just%20barely%20warm,%20and%20serve%20with%20Devonshire%20Clotted%20Cream%20(recipe%20follows%20in%20Part%203,%20and%20fresh%20strawberry%20jam.%3C/p%3E%3Cp%3EFrom%20left:%20Rhonda,%20me,%20Ann-my%20friend%20and%20our%20hostess,%20and%20Gail%EF%BB%BF%20%EF%BB%BF%EF%BB%BF%3C/p%3E){kind=link}
