Ingredientes

  • 1 c. boiling water
  • 1/2 c. dry cranberries
  • 2 tsp canola oil
  • 1 1/2 lb boneless skinless chicken breasts halved, and pounded to 1/2" thickness
  • 1 lrg carrot peeled, and diagonally sliced
  • 1 x red pepper julienned
  • 1 x yellow pepper julienned
  • 2 x scallions sliced
  • 2 Tbsp. honey
  • 1 Tbsp. lemon juice

Direcciones

  1. Heat the oil in a large skillet over medium-high heat. Add in the chicken breasts and saute/fry on each side for a total of 10 min. Remove from the skillet. Add in the carrot and peppers and saute/fry for 5 min. Add in the scallions and saute/fry for 3 more min.
  2. Mix together the honey and lemon juice. Add in the cranberries and the juice mix to the skillet and cook 1 minute. Add in the chicken breasts, cover, and simmer on low for 5 min.
  3. This recipe yields 6 servings.
  4. Serving size: 3 to 4 ounces.
  5. Comments: This dish is great served with rice.
