Ingredientes

  • 2 lb 'Possum - (to 2 1/2 lbs) fat removed Apple-Raisin Stuffing see * Note Salt to taste Freshly-grnd black pepper to taste
  • 3 x Sweet potatoes
  • 2 Tbsp. Brown sugar
  • 1/4 c. Flour - (to 1/3 c.)

Direcciones

  1. Stuff with Apple-Raisin Stuffing, and truss. Dust with salt and pepper; put on a roaster rack. Roast at 325 degrees for 1 hour to 1 1/2 hrs (30 to 35 min per lb.). For the last 30 min, put peeled and parboiled sweet potatoes around the meat. Dust meat with brown sugar mixed with 1/4 to 1/3 c. flour. Baste with juices 3 times during the last 30 min.
