- Wash beans under cool running water, then let them soak for 1 hour in sufficient water to cover them completely. Drain. Saute/fry onions in oil for 15 min. Add in liquid removed beans, carrots, thyme, and bay leaves, along with sufficient water to cover the beans by 3 inches. Bring to a boil over low heat, then simmer for 1 hour. Add in figs and cherries. Simmer 45 min longer. Season with salt and pepper. Remove bay leaves.
