Ingredientes

  • 1/3 c. Margarine (reduced calorie)
  • 1 c. Brown sugar
  • 1/3 c. Light molasses
  • 2 x Egg whites
  • 1 c. Pumpkin
  • 1 c. Oat bran
  • 1 c. Flour
  • 1 Tbsp. Pumkin pie spice
  • 1/2 tsp Baking soda
  • 1/4 tsp Baking pwdr
  • 1/4 tsp Salt (optional)
  • 1/2 c. Whole almonds (minced)
  • 1/4 c. Sugar
  • 1/2 tsp Cinnamon
  • 2 Tbsp. Flour
  • 1 Tbsp. Margarine

Direcciones

  1. Preheat oven to 350 and spray muffin c. with cooking spray. Cream together magarine, sugar, and molasses. Add in egg whites and pumkin. Add in dry ingredients and stir till moistened. Add in almonds. Fill muffin c. 3/4 full. Combine struessel topping ingredients, cutting in margarine till mix is crumbly. Sprinkle struessel topping over muffin batter. Bake for 35-40 min till wooden pick comes out clean.
