2 cups Bob's Red Mill Whole Grain Low Carb Baking Mix 1 teaspoon cinnamon, ½ teaspoon nutmeg, ¼ teaspoon ground cloves ½ teaspoon salt ½ cup Swerve sweetener 2 Tablespoons Milk (2%) 1 egg ½ teaspoon vanilla extract 0.1 ounce Sliced almonds (18 slices)
Preheat oven to 325 degrees F Combine all ingredients in a bowl and mix until blended. (will look like a meal paste) Form into balls (I weighed mine at 0.6 ounces per ball) Flatten with a fork, spoon or palm Top with one almond slice Bake for 10 minutes 3.2.2807
How can I be so forgetful?
I somehow managed to forget that I made these Almond Spice Cookies for the beautiful receptionist at Jumpstart.
It was her birthday and I hadn’t baked since starting this low carb eating plan. I baked using a new low carb baking mix from Bob’s Red Mill.
I am so excited that I am about to burst. I can now bake for the holiday’s and not feel so guilty consuming tons of carbs and refined sugar.
