Ingredientes

  • 1 1/4 c. Butter, softened
  • 1 c. Granulated sugar
  • 1 x Egg yolk
  • 2 1/4 c. All-purpose flour
  • 2 c. Unsweetened coconut medium shred
  • 1 pch Nutmeg

Direcciones

  1. In large bowl, beat butter till creamy; beat in sugar till smooth, about1 minute. BEat in egg yolk till slightly fluffy. With wooden spoon, stirin flour, coconut and nutmeg till thoroughly combined. Wrap dough in plastic wrap; refrigeratetill hard, about 2 hrs.
  2. Roll heaping Tbsp. of dough into 3-inch long logs. Place 2 inches apart on greased and floured or possibly parchment paper-lined baking sheets; flatten with back of fork to 1/4-inch thickness. Chill for 30 min to chill.
  3. Bake in 325F=160C oven, 1 sheet at a time, for 25-30 min or possibly till golden brown around edges. Let cold in the pan, on a rack, for 5 min; transfer to rack and let cold completely.
  4. Cookies can be stored in airtight container for up to 4 days.
