%20it%20was%20delicious,%20(b)%20it%20made%20enough%20for%20two%20nights%20and%20then%20some%20and%20(c)%20I've%20been%20too%20busy%20packing%20to%20cook.%3C/p%3E%3Cp%3EThe%20only%20thing%20I%20did%20different%20from%20Carol's%20recipe%20is%20I%20seasoned%20my%20chicken%20breasts%20with%20a%20fajita%20seasoning%20that%20I%20put%20together%20(2%20Tbsp%20onion%20powder,%201%20Tbsp%20garlic%20powder,%201%20Tbsp%20dried%20oregano,%201%20Tbsp%20white%20pepper,%201%20Tbsp%20cumin,%201%20Tbsp%20Tone's%20Southwest%20Chipotle%20seasoning%20and%201%20tsp%20salt%20-%20mix%20together%20and%20store%20in%20a%20jar).%20This%20is%20a%20really%20good%20casserole.%20We%20served%20it%20with%20some%20sliced%20avocado%20and%20a%20little%20sour%20cream.%20Even%20after%20the%20chicken%20was%20gone,%20we%20still%20had%20rice,%20beans%20and%20corn%20on%20the%20bottom%20of%20the%20casserole%20dish.%20At%20another%20time,%20I%20would%20have%20saved%20it%20for%20breakfast%20burritos%20(scrambled%20eggs,%20cooked%20Mexican%20chorizo,%20the%20rice-beans-corn%20mixture%20and%20some%20cheese%20rolled%20up%20in%20a%20big%20flour%20tortilla%20-%20Yum!),%20but%20since%20we%20are%20discarding%20everything%20perishable,%20it%20went%20in%20the%20trash.%20:(%3C/p%3E%3Cp%3EAnd%20after%20I%20saw%20Bunny's%20guest%20post%20for%20Retro%20Banana%20Cream%20Pie%20@%20Megan's%20Munchies,%20I%20knew%20I%20had%20to%20try%20it.%20Since%20moving%20to%20the%20south,%20I%20have%20seen%20tons%20of%20recipes%20for%20Banana%20Cream%20Pie,%20but%20I%20couldn't%20bring%20myself%20to%20make%20any%20of%20them%20since%20they%20all%20call%20for%20adding%20vanilla%20wafers%20to%20the%20pudding.%20The%20thought%20of%20biting%20into%20a%20soggy%20vanilla%20wafer%20covered%20with%20a%20packaged%20pudding%20mix%20makes%20me%20gag.%20But,%20this%20recipe%20is%20different.%20I%20didn't%20have%20enough%20whipping%20cream%20for%20the%20topping%20(I%20made%20this%20on%20the%20spur%20of%20the%20moment%20and%20didn't%20feel%20like%20going%20to%20the%20store%20for%20more%20whipping%20cream),%20so%20I%20just%20made%20do%20with%20the%20little%20I%20had.%20The%20pie%20did%20not%20last%20long.%3C/p%3E%3Cp%3EAnd,%20last%20but%20not%20least,%20I%20have%20taken%20a%20couple%20of%20photos%20of%20my%20backyard.%20This%20is%20our%20newest%20resident.%20Tom%20has%20a%20thing%20about%20frogs%20and%20toads,%20so%20we%20have%20them%20everywhere.%20At%20least%20their%20not%20gnomes%20or%20concrete%20burros....%3C/p%3E%3Cp%3EWe've%20had%20squash%20from%20the%20garden%20(with%20the%20Southwest%20Chicken%20and%20Rice%20Casserole)%20and%20the%20flowers%20are%20doing%20well.%20But%20you%20can%20tell%20it's%20been%20raining%20because%20they%20all%20have%20lovely%20raindrops%20on%20them.%3C/p%3E%3Cp%3ETom%20picked%20our%20first%20ripe%20blackberries%20already...%3C/p%3E%3Cp%3Eso%20when%20we%20get%20back,%20if%20the%20birds,%20rabbits%20and%20squirrels%20have%20left%20any%20for%20us,%20a%20blackberry%20cobbler%20is%20in%20order.%3C/p%3E%3Cp%3EAnd,%20yes,%20today%20is%20my%20birthday.%20Happy%20Birthday%20To%20Me!!%3C/p%3E){kind=link}
