Anchovies Fritter

This is a tea-break snack that is commonly made in most Malaysian homes especially when it is raining outside! In Malay it is called "Ikan Bilis Jemput-jemput or some call it as cekodok etc.. It is made out of plain flour and it does not taste the same as the onion fritters that I previously shared in this site.. So do have a try if you can get the small dried anchovies or you can substitute to shrimps.

Ingredientes

  • 1 red chili - chopped
  • 1 onion - chopped
  • 1/2 palm size dried anchovies/ fresh shrimps
  • 3/4 cup plain flour
  • 1/4 tsp baking powder
  • 2-3 sprigs coriander leaves - chopped (optional)
  • Salt to taste
  • Water - for the batter
  • Oil - frying

Direcciones

  1. Mix all ingredients in a bowl and add water to form a batter (not to thick or too watery).
  2. Heat enough oil in a wok or frying pan and use a spoon to drop bit by bit of the batter into the hot oil and fry till golden brown.
  3. Serve hot with a chilli or tomato sauce.
