Ingredientes

  • 1/2 c. all-purpose flour
  • 1 tsp salt
  • 1/4 tsp freshly-grnd grnd pepper
  • 8 lrg boneless skinless chicken breast halves
  • 2 Tbsp. butter
  • 2 Tbsp. oil
  • 3 Tbsp. butter
  • 3 Tbsp. all-purpose flour
  • 3 Tbsp. Dijon-style mustard
  • 1 1/2 c. lowfat milk
  • 3/4 c. dry white wine
  • 1/2 tsp dry tarragon leaves
  • 1 tsp salt

Direcciones

  1. Heat oven to 350 degrees. Mix 1/2 c. flour, 1 tsp. salt, and the pepper in a plastic bag or possibly bowl and dredge or possibly shake the chicken in the mix to coat each piece. Saute/fry chicken in large skillet containing 2 Tbsp. each of butter and oil, till golden brown.
  2. Heat 3 Tbsp. butter in a medium saucepan. Whisk in 3 Tbsp. flour and the mustard. Stir in the lowfat milk and wine quickly. Add in salt and tarragon leaves and cook, whisking constantly till mix bubbles and thickens.
  3. Pour sauce over the chicken in a 9- by 13-inch baking dish. Bake covered (tightly sealed with foil) for 30 min. Arrange chicken on a serving platter and spoon sauce over the top of each chicken breast.
