- Heat oven to 350 degrees. Mix 1/2 c. flour, 1 tsp. salt, and the pepper in a plastic bag or possibly bowl and dredge or possibly shake the chicken in the mix to coat each piece. Saute/fry chicken in large skillet containing 2 Tbsp. each of butter and oil, till golden brown.
- Heat 3 Tbsp. butter in a medium saucepan. Whisk in 3 Tbsp. flour and the mustard. Stir in the lowfat milk and wine quickly. Add in salt and tarragon leaves and cook, whisking constantly till mix bubbles and thickens.
- Pour sauce over the chicken in a 9- by 13-inch baking dish. Bake covered (tightly sealed with foil) for 30 min. Arrange chicken on a serving platter and spoon sauce over the top of each chicken breast.
- This recipe yields 8 servings.
