Angel Hair Frittata

Ingredientes

  • 4 Tbsp. extra virgin olive oil
  • 2 sm zucchini sliced
  • 1 x tomato seeded, minced
  • 2 lrg mushrooms sliced
  • 1 x green onion sliced
  • 4 x garlic cloves chopped
  • 2 Tbsp. minced black olives
  • 1/4 tsp dry basil crumbled
  • 1/8 tsp dry oregano crumbled
  • 4 x Large eggs
  • 1 1/2 c. grated Romano cheese
  • 6 ounce angel hair pasta freshly cooked Additional grated Romano cheese
  • 2 x tomatoes minced

Direcciones

  1. Heat 2 Tbsp. oil in heavy medium skillet over medium-high heat. Add in
  2. zucchini, 1 tomato, mushrooms, onion and garlic and saute/fry till tender, about 3 min. Add in olives and herbs. Cold.
  3. Preheat broiler. Beat Large eggs and 1 1/2 c. cheese in large bowl. Season with salt and pepper. Fold in vegetables and pasta. Heat remaining 2 Tbsp. oil in heavy large broilerproof skillet over medium heat. Add in
  4. egg mix to skillet. Press mix with back of spatula to even thickness. Cook till frittata is set and golden on bottom.
  5. Transfer skillet to broiler and cook till top of frittata is set, about 2
  6. min. Run small knife around edge of frittata to loosen. Invert skillet onto large plate. Remove skillet. Cut frittata into wedges.
  7. Serve, passing additional cheese and minced tomatotes separately.
  8. Serves 4.
