Angel Hair Pasta Salad with Shrimp

Boy oh boy do I have exciting news for all of you. I was selected to participate in the Hodgson Mill Summer Pastabilities contest. Our challenge was to create a Healthy Summer Pasta Salad Recipe using their 100% natural, certified non-GMO pasta. I was provided at no obligation, with 6 boxes of whole grain pasta. I am also going to be hosting a giveaway for a gift basket for all of my readers, valued at $25.00. The giveaway is open to U.S. residents only.

My love for Asian-inspired cuisine was my inspiration for this Angel Hair Pasta Salad with Shrimp.

Just look at all those fresh and healthy ingredients.

Angel Hair Pasta Salad with Shrimp

I used Pufine brand Fish sauce found at Cost Plus World Market. NOTE: I left the tails on for photos only. Please remove tails when preparing at home.

Ingredients

Directions

Cook noodles in large saucepan of boiling salted water until tender,

Drain. Rinse with cold water.

Whisk lime juice, fish sauce, chili-garlic and sugar in small bowl until dissolves.

Place shrimp in medium bowl.

Add 1 tablespoons dressing; toss to coat.

Divide noodles among bowls. Top with cucumber slices and all remaining ingredients.

Spoon with dressing over, and drizzle with remaining dressing.

Wow. The salad was bursting with incredible sweet and spicy flavors. The use of angel hair pasta instead of a traditional Asian noodle makes this a nice an light pasta salad.

I can’t wait to make this for our next summer gathering. I am sure it will be a hit.
