Ingredientes

  • 1 head garlic, separated into cloves
  • 8 ounce ricotta cheese
  • 4 ounce gorgonzola cheese
  • 1 c. heavy cream
  • 1/2 tsp salt
  • 4 x fresh sage leaves
  • 1 x minced walnuts

  1. Cook garlic in microwave till tender (about 15 seconds). Mince in garlic press and measure 2 Tbsp..
  2. Beat ricotta om medium-sized bowl till softened. Add in gorgonzola and mix till smooth. Beat in cream, salt, and chopped garlic.
  3. Dampen 18-inch square piece of cheesecloth and place sage leaves bottom-side-up in a pattern in center of square. Spoon cheese mix over leaves. Tie ends of cloth together to create a ball shape. Place in cheesecloth-lined strainer and allow to drain for 24 hrs in the refrigerator. Unmold cheese on serving platter.
  4. Decorate with minced walnuts if you like. Serve at room temperature with an assortment of crackers.
