Receta Annie's Pumpkin Roll

- Beat together: 4 T butterStir in: 1 teaspoon vanilla extract
- Blend till smooth.
- In large bowl, put together large eggs and sugar, beating well. Add in pumpkin, mixing till blended.2. In a separate bowl, put together flour, baking pwdr, spices and salt. Add in to egg mix, mixing well.
- Spread batter into a greased and waxed paper lined 10x15 inch jelly roll pan.
- Bake at 375 degrees for 15 min. Remove from pan.
- Cool for 15 min. Place cake on clean towel. Cool ten min longer.
- From 10 inch side, roll cake up in towel. Set aside.
- Meanwhile, prepare filling.
- Unroll cake and place on plastic wrap. Evenly spread filling over cake. Roll up cake. Cover with plastic wrap.
- Place cake, seam side down and refrigerate at least 2 hrs.
