Ingredientes

  • 3 large eggs
  • 1 c. sugar
  • 2/3 c. canned pumpkin
  • 3/4 c. all-purpose flour
  • 1 teaspoon baking pwdr
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • Filling recipe, follows
  • Mint leaves, optional, for garnish
  • Orange slices, optional, for garnish

Direcciones

  1. Beat together: 4 T butterStir in: 1 teaspoon vanilla extract
  2. Blend till smooth.
  3. In large bowl, put together large eggs and sugar, beating well. Add in pumpkin, mixing till blended.2. In a separate bowl, put together flour, baking pwdr, spices and salt. Add in to egg mix, mixing well.
  4. Spread batter into a greased and waxed paper lined 10x15 inch jelly roll pan.
  5. Bake at 375 degrees for 15 min. Remove from pan.
  6. Cool for 15 min. Place cake on clean towel. Cool ten min longer.
  7. From 10 inch side, roll cake up in towel. Set aside.
  8. Meanwhile, prepare filling.
  9. Unroll cake and place on plastic wrap. Evenly spread filling over cake. Roll up cake. Cover with plastic wrap.
  10. Place cake, seam side down and refrigerate at least 2 hrs.
