Receta Apple and Ricotta Coffee Cake

CAKE INGREDIENTS
1 apple; peeled, cored, and chopped lemon juice for the apples 1¾ cup all-purpose flour plus more to dust cake pan ¾ teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt 4 Tablespoons butter; at room temperature ¼ cup plain Greek Yogurt (like Chobani) ⅔ cup granulated sugar 1 teaspoon vanilla bean paste 2 eggs 1 cup part-skim ricotta cheese
STREUSEL INGREDIENTS
½ cup packed brown sugar ¼ cup all-purpose flour ½ cup oats 1 teaspoon ground cinnamon ¼ teaspoon salt 3 Tablespoons cold butter; cut into small pieces
Spray a 9-inch spring-form pan with non-stick spray. Combine streusel ingredients (except butter) in a food processor, and blend Add butter. Pulse about 10 times then process for 5 to 10 seconds. Set aside. Peel and chop apple and toss with lemon juice. Set aside. Mix together flour baking powder, soda and salt in a medium bowl. Using an electric mixer beat butter and yogurt for about 30 seconds, then beat in granulated sugar and vanilla. Add eggs, one at a time, beating well after each addition. Alternately add flour mixture and ricotta cheese to batter. Mix on low speed after each addition until combined. Note: this batter will be thick Preheat oven to 350 degrees F. Spread ½ of the batter into the bottom of the pan. Sprinkle with ½ of the filling mixture and then the diced apples. Spoon remaining batter over apples. It will not spread smoothly so be gentle and use dollops of batter. Sprinkle with remaining topping. Bake 35-40 minutes more or until a wooden toothpick inserted in the center comes out clean. Today, May 21, 2014, I will be attending my girl’s pinning ceremony. She will be pinned as a nurse and on Friday, she will graduate with a BS in Nursing.
That calls for a big celebration, don’t you all think?
I had big plans for my children even before they were born.
We went through many ups and downs as life threw us many curve balls. We faced divorce, cancer, a remarriage, a blending of families, all while my precious girls were growing up.
For a while I definitely had my doubts about ever seeing my big girl with a college degree. She has surpassed my expectations and I am one proud mama.
