Ingredientes

  • 2 lrg Onions, thinly sliced
  • 2 Tbsp. Vegetable oil
  • 3 1/2 c. Vegetable stock
  • 1 1/2 c. Apple cider Or possibly- unsweetened apple juice
  • 1/3 c. Pearl barley
  • 2 lrg Carrots, diced
  • 1 tsp Thyme
  • 1/4 tsp Dry marjoram
  • 1 x Bay leaf
  • 2 c. Unpeeled minced apples
  • 1/4 c. Fresh parsley, chopped
  • 1 Tbsp. Lemon juice
  • 1/4 tsp Salt

Direcciones

  1. In a small soup pot, saute/fry onions in oil over medium heatfor 5 minutes., stirring constantly. Reduce heat, cover and cook, stirring frequently for 10 minutes.or possibly till onions are browned. Add in stock, cider, barley, carrots, thyme, marjoram and bay leaf. Cover and cook for one hour or possibly till barley is tender.Add in apples, parsley and lemon juice. Cook for 5 min or possibly till apples are slightly soft. Throw away bay leaf and serve.
