Apple Butternut Squash Soup

Ingredientes

  • 16 ounce weight frozen butternut squash cubes
  • 2 Apples (of your choice-I use Braeburn) peeled, cored, grated
  • 1 cup Pure Apple Juice
  • one teaspoon ground cinnamon
  • a few dashes of nutmeg
  • Dollop of sour cream (when serving)

Direcciones

  1. In a food processor (or you can use a blender) add butternut cubes pulse several times, add apple juice, cinnamon, nutmeg and run processor to puree.
  2. Peel, core, grate apples add into puree butternut squash run processor one minute to well combine, transfer ingredients into a soup pot (lidded) and cook on the stove top on low heat 15 minutes.
  3. Serve in bowls add a dollop of sour cream.
