Apple Cider Spice Donuts
Ingredients
- 2/3 c
- packed brown sugar
- 2
- eggs
- 1 t
- apple pie spice
- 1/2 t
- salt
- 1/4 t each
- ground nutmeg, allspice, and cloves
- 6 T butter
- melted and cooled
- 1 cup
- apple cider
- 3 c
- all-purpose flour
- 1/2
- whole wheat flour
- 2 t
- baking powder
- 1/2 t
- baking soda
- Cooking Directions
- In a mixing bowl, beat the first seven ingredients until thick, about 5 mins. Gradually beat in the butter, then cider. Combine flours, baking powder and baking soda. Add to batter; beat just until blended. Cover and refrigerate 1 hour. Divide dough in half. Turn onto a lightly floured surface; pat into 1/2 inch thickness. Cut with a floured 2-1/2 inch doughnut cutter. Repeat with remaining dough. In an electric skillet or deep-fat fryer, heat oil to 375 degrees. Fry doughnuts, a few at a time, for 2 mins per side. Drain on paper towels. Drizzle with Caramel Glaze or Sprinkle with powdered sugar.
- Caramel Glaze:
- 1/3 c powdered sugar
- 2 T caramel ice cream topping
- 1-2 T milk
Mix together: powdered sugar and caramel ice cream topping, add milk if needed. Stir until desired consistency. Drizzle over doughnuts.
