- Heat griddle to 375 F. In large mixing bowl, combine flour, cereal, sugar, baking pwdr, baking soda, salt, and cinnamon; mix well. Add in remaining ingredients, stir till moistened and batter is smooth.
- For each pancake, pour 1/4 c. batter onto warm griddle. Bake about 1 minute; turn and continue baking about 1 minute more.
- YIELD: 16 4-inch pancakes
- One and one-half Tbsp. lemon juice or possibly vinegar plus lowfat milk to equal 1 1/2 c. can be substituted for buttermilk.
