Receta Apple Cinnamon Raisin Quick Bread
I love being able to whip up a quick bread for breakfast or dessert. They're always a snap to make, they taste delicious and they're done in no time at all. I had some apples that were in the fridge and also an opened box of raisins so I decided to combine the two and make it into a moist and delicious apple cinnamon raisin quick bread. If you'd like, you could also toss in some walnuts or pecans, but my kids don't like nuts in their bread so I decided against it, but I'm sure it would be a nice addition! This bread can be mixed together by hand and in one bowl...simple and delicious!
Ingredients are as follows:
- 1/2 C butter, softened
- 1 C brown sugar
- 1 tsp. vanilla
- 2 eggs
- 2 C flour, divided
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/8 tsp. ginger
- 3/4 C plain greek yogurt
- 2 medium apples peeled, cored & diced
- 1 C raisins
Directions:
Preheat oven to 350 degrees; grease a 5 x 9 inch loaf pan.
Cream together the butter, sugar and vanilla.
Thoroughly mix in the eggs.
Stir in 1 C of the flour, baking soda, salt, cinnamon and ginger.
Stir in the greek yogurt, apples and raisins.
Mix in the remaining cup of flour; do not over mix!
Pour into prepared pan.
Bake for 55-65 minutes. Allow to cool in pan.
Slice, serve and enjoy!
