Apple Cinnamon Scones-Tropical Traditions Product Review
The great people at Tropical Traditions sent me a huge jar of Coconut Oil in return for trying their product and sharing the review. I have never used coconut oil before so I wasn’t sure what to do with it, so I went to their website and recreated this Apple Cinnamon Scone recipe…
- Apple Cinnamon Scones
- 1 cup grated Granny Smith apples 1/4 cup plus 2 tablespoons sugar
- 1 tablespoon cinnamon
- 2 cups flour
- 1 1/2 tablespoons baking powder
- 1/2 tablespoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons Tropical Traditions Coconut Oil, solid
- 1 egg, separated
- 1/2 cup whole milk, more if needed
DIRECTIONS:
Preheat oven to 375 degrees. In a small bowl, combine apples with 2 tablespoons sugar and 1 tablespoon cinnamon. In medium bowl combine flour, baking powder, baking soda, 1/4 cup sugar and salt. Cut in coconut oil until mixture is coarse and crumbly. Beat egg yolk with milk and add to flour mixture.
With an electric mixer, mix until loose “dough” forms (approx. 2 minutes). Add an extra tablespoon or so of milk if needed. Mix in apple pieces. Dough will be loose and sticky.
Form dough into a flat 6-inch round disk and wrap in parchment paper. Place in a tightly sealed zip lock bag. Refrigerate 1 hour. Dough also holds well if made a day in advance and refrigerated.
Cinnamon Sugar Topping
Leftover egg white
1 tablespoon milk
2 tablespoons sugar
1 teaspoon cinnamon
Beat egg white with milk. In a shallow plate, combine sugar and cinnamon, Remove dough from fridge and cut into 8 equal wedges. Brush top and sides with egg mixture. Dip top of scone into sugar mixture. Place scones 2 inches apart on a greased sheet. Bake 25-30 minutes or until tops are slightly brown.
The coconut oil was something fun and different to try. It was more solid than I thought it would be, but it broke up very nicely in my mixer. The recipe originally called for Coconut Flour which I couldn’t find and had I been able to use that, the flavor may have been more “coco nutty”. In the end, I really liked the product and since I have a HUGE jar of it, I will end to incorporate it into many more recipes.
