Ingredientes

  • 2 c. low-sodium chicken broth
  • 2 c. water
  • 1/2 c. white wine
  • 2 x Golden brown Delicious apples peeled, minced
  • 1 c. thinly-sliced carrots
  • 1 sm onion thinly sliced
  • 1/2 c. minced fresh fennel
  • 1 x bay leaf
  • 1/4 tsp dry thyme leaves
  • 6 x peppercorns Low-fat plain yogurt (optional)

Direcciones

  1. In large pot, combine all ingredients, except yogurt, and bring to boil. Reduce heat and simmer, covered, for 20 min.
  2. Strain soup, reserving liquid. Remove bay leaf from apple vegetable mix.
  3. In blender or possibly food processor, puree mix; add in reserved liquid and blend well. Reheat soup, if necessary, ladle into soup bowls and serve with a dollop of yogurt, if you like.
  4. This recipe yields 4 servings.
