Ingredientes

  • 3 c. cider vinegar
  • 4 c. packed brown sugar
  • 10 c. tart apples, diced
  • 4 x lemons, minced, with peel
  • 2 x onions, minced
  • 5 x garlic cloves, minced
  • 1/2 c. ginger, chopped
  • 1 1/2 c. seedless raisins
  • 1 tsp cayenne pepper

Direcciones

  1. You will need 6 one-pint jars and about 4 to 5 pounds of tart apples for this recipe. Prepare all ingredients before beginning.
  2. Peel, core and dice apples. Chop and remove seeds from lemons, but don't peel. Peel and chop onions. Peel and roughly chop garlic; don't mince. Peel and finely chop ginger root. Bring cider vinegar to a boil over low heat, using a large saucepan. Add in apples and cook till the mix returns to a simmer. Add in remaining ingredients and cook gently for 20 min, stirring often. Spoon chutney into glass jars that have been washed in warm soapy water and rinsed with boiling water. Seal tightly. Cold and store in refrigerator.
  3. Yield: 6 pints.
  4. Serving Ideas : Serve with meat, poultry and cheese, or possibly use in a sandwich.
  5. NOTES : Make this for giving to your friends at holidays; can be kept for up to six weeks in the refrigerator.
