- Apple Loaf Cake w/ Cinnamon Walnut Icing:
- 1 cup sugar
- 2 apples, peeled and cut into small dice (I used Empire apples)
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 egg
- 1 stick butter, melted (1/2 cup)
- 1/3 cup chopped walnuts
- 1 cup flour
- 1/2 cup of almond flour
- 1 tsp baking soda
- 1 cup of confectioner's sugar
- 1/2 tsp cinnamon
- 1-2 tbsp milk
- 1/4 cup of chopped walnuts

.....it's%20a%20recipe%20collection%20and%20stories%20of%20her%20family,%20and%20every%20recipe%20is%20a%20winner.%3C/p%3E%3Cp%3ENot%20sure%20if%20you%20can%20find%20it%20anymore,%20but%20you%20can%20certainly%20contact%20her%20and%20she%20will%20send%20you%20one.%3C/p%3E%3Cp%3EShe%20calls%20this%20an%20apple%20bread....but%20that's%20only%20because%20it's%20baked%20in%20a%20loaf%20pan.%20It's%20a%20cake.%3C/p%3E%3Cp%3EAnd%20I%20took%20the%20lead%20and%20iced%20it%20with%20a%20cinnamon%20walnut%20glaze,%20but%20you%20don't%20have%20to.....(but%20I%20suggest%20you%20do).%3C/p%3E%3Cp%3EIf%20you've%20noticed%20lately,%20instead%20of%20using%20the%20full%20amount%20of%20all%20purpose%20flour%20in%20recipes,%20I%20have%20been%20taking%20out%201/2%20cup%20of%20flour%20and%20adding%201/2%20cup%20of%20almond%20flour%20instead.%20But%20feel%20free%20to%20use%20just%20the%20flour%20if%20that's%20all%20you%20have.%3C/p%3E%3Cp%3EIt%20was%20also%20the%20debut%20of%20my%20sparkle%20sugar!%20I%20could%20not%20resist%20buying%20this%20pretty%20sugar.%3C/p%3E%3Cp%3EIt%20makes%20every%20cake%20special!%3C/p%3E%3Cp%3EI%20guess%20I%20have%20become%20a%20baking%20geek.%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E%3Cp%3EMix%20the%20diced%20apples%20with%20the%20sugar%20and%20cinnamon%20in%20a%20large%20bowl%20and%20set%20aside.%20The%20juices%20from%20the%20apples%20will%20combine%20with%20the%20sugar%20and%20make%20it%20nice%20and%20juicy.%3C/p%3E%3Cp%3EMix%20in%20the%20rest%20of%20the%20ingredients......adding%20in%20the%20flours%20last.%3C/p%3E%3Cp%3EScrape%20batter%20into%20a%20well%20greased%20loaf%20pan%20and%20bake%20for%201%20hour%20in%20a%20325F%20oven.%3C/p%3E%3Cp%3ELet%20rest%20in%20the%20pan%20for%2015%20minutes%20before%20transferring%20to%20a%20cooling%20rack.%3C/p%3E%3Cp%3ECinnamon%20Walnut%20Glaze:%3C/p%3E%3Cp%3E1%20cup%20of%20confectioner's%20sugar%3C/p%3E%3Cp%3E1/2%20tsp%20cinnamon%3C/p%3E%3Cp%3E1-2%20tbsp%20milk%3C/p%3E%3Cp%3E1/4%20cup%20of%20chopped%20walnuts%3C/p%3E%3Cp%3EMix%20all%20ingredients%20with%20a%20fork%20until%20you%20reach%20the%20desired%20consistency.%20If%20the%20icing%20is%20too%20thick,%20then%20add%20in%20a%20drop%20more%20of%20milk.%3C/p%3E%3Cp%3EOnce%20the%20cake%20is%20cool,%20drizzle%20the%20icing%20all%20over%20the%20loaf.%20The%20walnuts%20will%20stick%20to%20the%20cake%20once%20the%20icing%20has%20cooled%20and%20hardened.%3C/p%3E%3Cp%3EI%20kept%20this%20cake%20in%20the%20fridge,%20and%20it%20was%20fantastic%20COLD.%3C/p%3E%3Cp%3EWe%20loved%20it.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3Exo%3C/p%3E){kind=link}
