Apple Muffins

These muffins are some of the best I've ever eaten. They are very moist and have a wonderful texture. Hard to eat just one. The flavor just screams Yummy!

Ingredientes

  • Topping:
  • 1/2 cup firmly packed Brown Sugar
  • 1/3 cup All-Purpose Flour
  • 1/4 cup unsalted Butter, melted (you can use margarine)
  • 1 tsp Cinnamon
  • Muffin ingredients:
  • 1 1/2 cups firmly packed Brown Sugar
  • 2/3 cup Vegetable oil
  • 1 Egg
  • 1 1/2 tsp Vanilla
  • 2 1/2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Baking Powder
  • 1 cup Buttermilk
  • 3 pealed, diced, firm tart Apples (such as Granny Smith)

Direcciones

  1. Mix toppings and set aside (if it is too liquid add a little more flour).
  2. In a large bowl whisk together brown sugar, oil, egg and vanilla until smooth.
  3. In a separate bowl, sift together flour, soda, salt, cinnamon, nutmeg and backing powder.
  4. Stir oil mixture into flour mixture alternately with buttermilk.
  5. Fold in apples, mixing just until combined.
  6. Spoon into greased muffin cups filling 3/4 full (Can use paper cupcake liners).
  7. Sprinkle topping over evenly.
  8. Bake at 350 degrees for 25-30 minutes or until golden brown and tops spring back.
  9. Makes about 16-24 depending on how full you fill your cups.
