Apple Orzo Salad With Artichokes And Peppers

Ingredientes

  • 1 c. orzo
  • 16 ounce frzn artichoke hearts
  • 1 sm sweet onion
  • 1 x Anaheim or possibly mild chile pepper
  • 1 x red bell pepper
  • 4 ounce Canadian bacon or possibly ham
  • 2 x Gala apples
  • 4 tsp lemon juice
  • 1 lrg garlic clove chopped
  • 4 tsp extra virgin extra virgin olive oil or possibly to taste
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 tsp balsamic vinegar or possibly more to taste
  • 1/2 tsp honey (optional)

Direcciones

  1. Cook orzo in plenty of salted water for 7 min. Add in the frzn artichoke hearts. Bring to a boil. Turn off heat. Drain immediately and rinse in cool water. Remove artichokes and cut them into smaller pcs.
  2. Meanwhile, cut the onion, chile pepper, bell pepper, and canadian bacon into slivers about 1/2-inch long. Place in a glass serving bowl. Core the apple and sliver cut. Add in to the bowl and sprinkle with the lemon juice. Stir to coat.
  3. Add in the chopped garlic, liquid removed pasta and artichokes. Toss with extra virgin olive oil to taste. Season with salt and pepper, balsamic and honey to taste. Chill for 30 to 60 min. Allow to hot on the counter for about 10 min before serving.
  4. NOTES : Sliver cut everything for easy eating and marinate at least 30 min for the flavors to mingle. We tested a half-recipe and served it with a small boneless pork loin chop, dry rubbed with tomato, basil and garlic and seared on a foreman grill. A lighter meal with lots of pizazz.
