Receta Apple Pancakes/Crepes Recipe
Apple pancakes, can be served as a dessert or as a lazy Sunday breakfast!! It is quick and easy with stewed cinnamon flavored apples, and wholesome too!!
I just used one large apple and made the batter with just 1/2 cup of flour. I made 3 pancakes with slightly thicker batter and got two crepes with slightly thinner batter. For the crepes, I filled with stewed apples and served with dusted sugar. And for the pancakes, I served with stewed apples on top with lots of syrup drizzled....both were so yummy and my kids devoured on it.
The batter does not contain any sugar, as for the crepes, there is sugar dust and for the pancakes there is stewed apple syrup....if you are more on the sweet side, do add in a bit of sugar.
I saw this recipe on a local magazine, Vanitha, and slightly adapted it to suit my taste.

Ingredients:
For the batter:
- Flour: 1/2 cup
- Egg: 1
- Milk: 3/4 cup (enough to make a batter, so add a little more or less)
Baking powder: 1/2 tsp.
Baking soda: A fat pinch
Oil: 1tbsp.
Salt: A fat pinch.
For the apple stew:
Apple: 1 large, or two medium, peeled, cored, chopped.
Butter: A generous dollop.
Sugar: 3 to 4 tbsp.
Cinnamon Powder: 1/2 tsp.
Cinnamon flavored sugar for dusting: 1 tbsp (optional)
Method:

Peel, core and chop....keep aside.
Make the pancake batter ie, in a bowl, combine the flour, milk, egg, salt, BP and BS....whisk until well combined and there are no lumps in the batter... and keep it aside....while we cook the apples.
Add a generous dollop of butter into a pan.
Add in the chopped apples, mix and simmer the fire.
Add in the cinnamon powder.
Add in the sugar.
Simmer, until the apples are cooked/stewed and switch off the fire....keep this aside.
We will make the pancakes first....lightly grease a heated pan, with an cloth dipped in oil or spray your favorite cooking spray.
Pour in 1 ladle full of batter....allow it to cook and the flip it over....you will get about 3 pancakes.
Thin the batter a bit with milk and make the crepes, pour a ladle full of batter and swirl or rotate the skilled until the batter coats the bottom of the skillet.
Cook the crepe until edges turn golden and lacy, and start to pull away from the skillet.....using a knife or an offset spatula, carefully turn crepe over; cook other side until just golden...you will get about 2 crepes with this. Then spoon in some of the stewed apples.....and fold over.
Serve dusted with cinnamon flavored sugar.
For the pancakes, serve with stewed apples on top.
