This Apple Spice Cake won’t last long and the Caramel Frosting just tops it off. I love anything with apples and caramel! Great if you need a quick dessert since it uses a mix.
- 1 (18.25 ounce) Duncan Hines Spice Cake Mix
- 2 eggs
- 1/2 cup evaporated milk
- 1 stick butter or margarine or 8 tablespoons, softened
- 2 cups apples, peeled and grated
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Mix all ingredients together with mixer. Spray a 9 x 13 baking dish with cooking spray. Bake in preheated 375 degree oven for 30 to 35 minutes.
- Caramel Frosting
- 1/3 cup butter or margarine
- 1/2 cup brown sugar
- 3 tablespoons evaporated milk
- 1 1/2 cups confectionery sugar
- 1 teaspoon vanilla extract
1 cup walnut pieces or nuts of your choice.
Melt butter in pan on top of stove. Add sugar and cook until sugar melts. Add milk, bring to boil. Remove from stove and add sugar and vanilla. Beat with mixer, adding more sugar if needed. Fold in nuts. Spread on cake.
Note: I like to poke holes in the cake and just pour the frosting over the cake. Frosting will harden as it cools.
Enjoy!
