Receta Apple Stuffed Guinea Fowl

- Preheat oven to Gas Mark 4/350F/180C. Chop pistachio nuts.
- Peel and finely chop onion. Quarter, core and finely chop apple.
- Mix together minced onion, apple, pistachios, parsley, salt and pepper.
- Season guinea fowl with salt and pepper.
- Fill guinea fowl cavity with apple mix. Place on roasting tray.
- Dot guinea fowl with butter. Roast for 1 1/4-1 1/2 hrs till cooked through, basting often. Serve.
- NOTES : Serve this delicious roast bird with mashed potatoes, green beans and glazed onions.
