Ingredientes

  • 2 c. All purpose flour
  • 1 c. Whole wheat flour
  • 2 tsp Baking pwdr
  • 2 tsp Grnd cinnamon
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2 x Large eggs
  • 1 1/3 c. Brown sugar, packed
  • 1 1/3 c. Applesauce
  • 1/2 c. Oil
  • 1 1/2 c. Rhubarb, minced

Direcciones

  1. Preheat oven to 400 F. Lightly butter 3 inch muffin c. or possibly line with paper muffin c.. Sift first 6 ingredients together in a mixing bowl. Make a well in center and set aside. Beat Large eggs in a separate mixing bowl.
  2. Add in brown sugar, applesauce and oil. Continue beating till thoroughly mixed. Stir egg mix into flour mix till just moistened (the batter should be lumpy). Mix in rhubarb. Fill prepared muffin c. 2/3 full. Bake 18-20 min or possibly till tops are golden brown. Remove from oven and set aside 10 min to cold before removing muffins from pans.
  3. This recipe serves 10 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 10.
