%20-%20I%20thought%20I'd%20better%20post%20this%20recipe%20before%20I%20forget%20what%20I%20did.%3C/p%3E%3Cp%3ESo,%20here's%20the%20story:%20Last%20Sunday%20I%20was%20thumbing%20through%20Better%20Homes%20and%20Gardens%20and%20there%20was%20this%20recipe%20for%20chicken%20with%20tomato%20and%20dried%20apricots%20and%20raisins%20which,%20I%20actually%20thought%20sounded%20kind%20of%20yucky,%20but%20which%20suddenly%20reminded%20me%20that%20apricots%20and%20soy%20sauce%20are%20a%20very%20tasty%20combination%20and%20I%20hadn't%20made%20my%20apricot%20chicken%20in%20a%20long%20time.%3C/p%3E%3Cp%3ESmith%20and%20I%20left%20the%20kids%20at%20home%20and%20made%20a%20little%20date%20of%20going%20to%20the%20grocery%20store.%20%20(That%20just%20sounds%20kind%20of%20sad,%20doesn't%20it%20-%20but%20it%20was%20actually%20fun!%20%20And%20he%20only%20bought%20blue%20cheese%20-%20no%20weird%20condiments!%20%20Yay%20Smith!)%20%20I%20bought%20a%20pack%20of%20chicken%20breasts%20(bone%20in,%20skin%20on),%20a%20jar%20of%20apricot%20jelly,%20some%20raisins,%20could%20not%20find%20dried%20apricots%20-%20or%20fresh%20for%20that%20matter,%20but%20oh%20well.%20%20Then,%20we%20went%20home%20and%20I%20spent%20a%20lovely%20Sunday%20afternoon%20cooking%20this%20up,%20sipping%20a%20glass%20of%20wine,%20and%20listening%20to%20Harry%20Shearer%20on%20NPR%20satirize%20all%20the%20wack-a-doodle%20politicians%20in%20this%20great%20country%20of%20ours.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20450.%3C/p%3E%3Cp%3EFind%20a%20nice%20bowl%20and%20spoon%20the%20Apricot%20Jam%20or%20jelly%20into%20it,%20followed%20by%20the%20soy%20sauce.%20Stir%20it%20up%20using%20a%20whisk.%20%20It%20shouldn't%20be%20soupy%20-%20the%20jelly%20should%20keep%20it%20a%20bit%20thick.%3C/p%3E%3Cp%3ESalt%20and%20pepper%20the%20chicken%20-%20both%20sides.%20%20Then%20rub%20the%20jelly/soy%20mixture%20all%20over%20the%20chicken%20breasts,%20making%20sure%20you%20shove%20a%20bit%20of%20it%20up%20under%20the%20skin.%20%20Chop%20up%20the%20onion%20and%20the%20celery%20and%20scatter%20them%20over%20the%20bottom%20of%20a%209x13%20roasting%20pan.%20%20Don't%20use%20anything%20too%20big%20-%20because%20next%20you%20are%20going%20to%20nestle%20the%20chicken%20on%20top%20of%20the%20onions%20and%20celery%20and%20if%20you%20use%20a%20pan%20that's%20too%20big,%20you%20chicken%20will%20sit%20next%20to%20the%20onions%20and%20celery%20not%20on%20top%20of%20it.%20%20%20Stick%20the%20chicken%20in%20the%20oven%20for%2015%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20pour%20the%20chicken%20stock%20into%20the%20bowl%20that%20you%20used%20previously%20to%20mix%20up%20the%20apricot/soy%20stuff.%20%20Then,%20stir%20the%20raisins%20and%20the%20soy%20sauce%20into%20the%20chicken%20stock.%20%20When%20the%20chicken%20has%20roasted%20for%2015%20minutes,%20turn%20the%20heat%20down%20to%20200.%20%20Pull%20your%20chicken%20out%20and%20pour%20this%20mixture%20over%20the%20whole%20thing.%20%20Put%20it%20back%20into%20the%20oven%20for%20about%2020%20-%2035%20minutes,%20depending%20on%20how%20thick%20your%20chicken%20breasts%20are.%20%20(If%20you%20have%20a%20thermometer,%20the%20chicken%20will%20be%20done%20at%20about%20165)%20-%20take%20the%20chicken%20out%20of%20the%20oven%20and%20put%20the%20chicken%20on%20a%20plate%20and%20tent%20with%20foil.%20%20Then,%20pour%20the%20sauce,%20onions,%20raisins%20and%20all,%20into%20a%20sauce%20pan,%20sprinkle%20in%20the%20flour%20and%20stir%20stir%20stir.%20%20Let%20the%20sauce%20bubble%20away%20until%20it%20is%20reduced%20by%20a%20half%20-%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20serve,%20plate%20your%20chicken%20along%20with%20whatever%20frozen%20vegetable%20you've%20heated%20up%20at%20the%20last%20minute,%20and%20pour%20the%20sauce%20over%20the%20breast.%20%20Your%20children%20will%20love%20you%20for%20this,%20guaranteed.%3C/p%3E){kind=link}
