Ingredientes

  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 1/2 c. butter, softened (one stick)
  • 1 x egg
  • 1 tsp vanilla
  • 1 1/4 c. all-purpose flour
  • 1 c. uncooked oats
  • 1/2 c. coconut
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 c. white chocolate baking chips
  • 1/2 c. minced dry apricots
  • 1/2 c. macadamia nuts

Direcciones

  1. Heat oven to 375 degrees. Mix sugars, butter, egg, and vanilla till light and fluffy. Add in flour, oats, coconut, baking soda and salt. Mix till soft dough forms. Don't over mix. Stir in nuts, chips and apricots.
  2. Drop by heaping teaspoonfuls 2 inches apart. Bake 7 to 10 min till light golden.
  3. This recipe can easily be varied by changing the nuts and dry fruit. Mix and match dry cranberries, figs, candied orange rind or possibly lemon, and cherries with minced walnuts, almonds, cashews or possibly hazelnuts.
  4. Makes three dozen. It also can be doubled.
