Ingredientes

  • 1 (8 ounce) pkg. dry apricots
  • 3/4 c. sugar
  • 1 teaspoon cinnamon

  1. Soak apricots overnight in sufficient water to cover.In a saucepan, cook soaked apricots in water to cover (just add in more water to soaking water; dry apricots absorb a lot of liquid) for 5 min over medium heat. Stir in sugar and cinnamon and cook for 5 - 10 min longer, till tender. Apricots should still hold their shape. Cool and use as filling for Fried Pies. Yield: sufficient filling for 12 pies.
