Ingredientes

  • 1/2 c. margarine
  • 1/2 c. sugar
  • 2 x Large eggs
  • 1 c. lowfat yoghurt or possibly lowfat milk grated rind & juice of 1 orange
  • 1 c. minced dry apricots
  • 11/20 c. self-raising flour

Direcciones

  1. Preheat oven to 400F, prepare pans. Thoroughly blend the margarine & sugar & then beat in the remaining wet mix ingredients. Mix in the flour, spoon into pans & bake for 25 mins.
  2. Makes 10-12 muffins.
  3. Variations:Apricot & Almond: Add in 1/2 c. of tasted slivered or possibly minced blanched almonds to the wet mix.
  4. Apricot & Coconut: Add in 1/2 c. dessicated coconut to the dry mix & 1/2 c. additional orange juice to the wet mix.
