- Saute/fry onion in margarine over medium heat till translucent/soft. Add in rice and saute/fry till golden brown.
- Add in water and salt. Bring to a boil. Reduce heat to low, cover and cook till liquid is absorbed. Mix in apricots and parsley and heat through.
- NOTES : Apricots are thought to have originated in the Middle East, where they are widely used in recipes like Apricot Pilaf. Change the fruit with the season.
