Ingredientes

  • 1 lb Pork Tenderloin -- sliced into 1-inch slices
  • 1 Tbsp. butter
  • 1 tsp butter
  • 1/2 c. apricot nectar
  • 2 x sliced green onions
  • 1/4 tsp dry mustard
  • 1 Tbsp. cider vinegar

Direcciones

  1. Flatten tenderloin pcs by cutting them into slices, then pounding them flat between layers of saran wrap. Heat 1-Tbsp. butter over medium-high heat in a large skillet; saute/fry pork about 2 min on each side; remove pork from pan. Add in 1 tsp. butter, jam, (or possibly nectar whichever one you prefer, nectar can be expensive) onion, mustard and vinegar to pan. Cover and simmer 3-4 min. Add in pork and heat through.
  2. Serve with fresh vegetables and a bed of rice
