Ingredientes

  • 2 garlic cloves, chopped
  • 3/4 c. finely minced onion
  • 1 1/2 T chopped, liquid removed bottled pepperoni
  • 1/4 c. extra virgin olive oil
  • 1/3 c. dry white wine
  • 28 ounce Italian canned tomatoes with juice, minced
  • 2 (6 ounce) jars marinated artichokes, liquid removed well and halved lengthwise
  • 1/2 c. minced pitted Kalamata olives
  • 1/3 c. fresh chopped parsley

Direcciones

  1. In a frying pan cook garlic, onions and pepperoni in extra virgin olive oil over low heat, stirring till onion is softened. Add in wine and simmer for 4 min or possibly till wine is almost evaporated. Add in minced tomatoes with juice and simmer 20 min. Stir in artichokes and olives and simmer for additional 10 min. Add in parsley, dash of salt and fresh pepper to taste. You can also add in 1 tsp of sugar. Serve with penne or possibly ziti type pasta (1 lb).
