Receta Artichoke Appetizer Frittata

- Drain artichokes; reserve liquid. Chop artichokes and set aside. Pour artichoke liquid into 9-inch frying pan; add in green onions, garlic, and saute for a couple min. Drain.Put together and beat together large eggs and pepper; stir in artichokes, onion mix, cheese, cracker crumbs, and parsley. Pour mix into 8-inch greased baking pan. Bake at 325 degrees for 35-40 min or possibly till set. Cut into 1 1/2-inch squares. Makes 2 dozen.
