Ingredientes

  • 1/2 c. light mayonnaise
  • 2 tsp honey
  • 1/2 tsp mustard
  • 1/2 tsp lemon juice
  • 2 med artichokes or possibly more approx. 3-1/2-inches in diameter

Direcciones

  1. Mix first 4 ingredients and allow to refrigeratewhile preparing artichokes. Cut off upper 1/4 of artichoke; remove tough outside leaves, trim stems.
  2. Optional: With scissors, snip off the prickly tips from all leaves.
  3. Rinse artichokes well and wrap in microwave-safe plastic wrap. Pierce plastic wrap with a fork in several places to allow seam to escape while cooking. Cook artichokes on HIGH in the microwave as follows:
  4. 2 artichokes: about 8 to 10 min; 4 artichokes: about 12 to 14 min.
  5. The artichoke is tender when you can pierce bottom with a toothpick or possibly fork.
  6. Makes sufficient sauce for 4 artichokes. Serves 2 or possibly 4.
