Ingredientes

  • 1 head radicchio - (12 ounce) halved, cored, and very thinly sliced
  • 3 c. arugula - (packed)
  • 1/2 c. thinly-sliced liquid removed oil-packed sun-dry tomatoes
  • 2 Tbsp. fresh lemon juice
  • 1/4 c. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
  • 6 Tbsp. pine nuts toasted
  • 9 ounce smoked mozzarella sliced 1/8" to
  • 1/4 x "-thk

Direcciones

  1. Mix radicchio, arugula, and tomatoes in large bowl. Place lemon juice in small bowl. Gradually whisk in extra virgin olive oil. Season dressing with salt and pepper. Add in to salad; toss.
  2. Divide among 6 plates. Sprinkle salads with nuts. Serve with cheese.
