Receta Asian Napa Chicken Salad
As the result of both Christmas and my daughters wedding in the same week, I am now the proud owner of quite the tummy pooch. Too much amazing food too close together, but it was so worth it all. I am actively working on losing that hard earned pooch but think it is completely unfair how easy it is to gain weight, yet how impossible it is to get off. Especially at 42 years old.....
When I compiled the post of my 10 Must Have Salad recipes, I was shocked to find that I have never posted this Asian Napa Chicken Salad because I truly do L-O-V-E it. The perfect balance of my favorite Asian flavors, with a hint of sweetness and the amazingly addictive crunchy noodles and almonds. I've even served this salad at a party for 45 people with loaves of hot, homemade french bread. Hugely popular!
Asian Napa Chicken Salad

Salad:
1 large head of Napa cabbage, chopped
- 1 rotisserie chicken, meat only and pulled into small pieces
- 8 green onions, chopped
- 3 ounces chicken flavored Ramen noodles, crushed
- 1 C slivered almonds
- 2 Tb butter
- Dressing:
- 1/3 C oil
- 1/3 C rice wine vinegar
- 1 1/2 Tb soy sauce
- 1 1/2 Tb sesame oil
- 6 Tb sugar
1. Combine napa cabbage, chicken and green onions in a large bowl. In a small bowl, whisk together all the ingredients for the dressing.
2. In a small skillet, melt the butter then add the crushed ramen noodles and slivered almonds. Toast over medium heat until the noodles and almonds are golden brown, stirring frequently to keep them from burning. Add the chicken seasoning packet to the hot noodles and almonds once they are done browning.
3. Add the dressing and noodle/almond toppings to the salad and toss to combine. Serve immediately. Alternately, combine just enough salad, dressing and crunchy toppings for your meal and keep all items separate until the next serving.
