Receta Asian Noodle Salad
Don't forget to enter our giveaway here...I have always heard about The Pioneer Woman, but actually have never been on her site until now. Holy Cow....that woman is AMAZING! She has some really great recipes on her site...and also great tips for photography, gardening, homeschooling, etc. I could spend hours just on her site.
While I was checking out her recipes, and found this salad. It sounded so good. And it was packed with an assortment of veggies. It would be a perfect side for a party, or for a main dish because it makes a lot. We didn't have all the peppers on hand, and it tasted great. So I say feel free to add or subtract what you would like!
1 box linguine noodles-cooked as directed on the package
1/2 head sliced green cabbage
1/2 head sliced purple cabbage
- 1/2 bag fresh spinach
- 1 red pepper-sliced
- 1 yellow pepper-sliced
- 1 orange pepper-sliced
- 2 cups beans sprouts
- 1 cup chopped cilantro
- 3 green onions-chopped
- 2 cucumbers-peeled and sliced
- 1 can cashews
- DRESSING
- 1 whole lime-juiced
- 8 tablespoons olive oil
- 9 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1/3 cup brown sugar
- 3 tablespoons fresh ginger-chopped
- 2 garlic cloves-minced
- 1 jalapeno-chopped
- 2 tablespoons chopped cilantro
Cook pasta as directed on the package. Then drain and let cool. Add all ingredients and mix together.
Mix together in a bowl all the ingredients for the dressing. Pour over the salad and serve. Enjoy!
